beau's Homemade Ice Cream - Vanilla flavored
Fruits or syrups can be added to make other flavors.
4 eggs - beaten
2 1/2 cups sugar
6 cups milk
4 cups light cream (1/2&1/2, Pet or Milnot)
2 tbsp vanilla
1/2 tsp salt

Beat eggs until light. Add sugar gradually beating until mixture thickens. Add remaining ingredients, mix thoroughly. 
Freeze in hand turn or electric ice cream freezer.

Makes 1 gallon.
beau's Chinese Cole Slaw
1 lb pkg cut up coleslaw
1 bunch green onions - tops only - chopped
1 pkg Oriental flavored Ramen noodles - broken up
1 (2 oz) bag sliced almonds
1 (2 oz) bag shelled sunflower seeds
1/2 cup canola oil
1/4 cup vinegar
1/4 cup sugar

In a large bowl, mix coleslaw, onions, Ramen noodles, almonds and sunflower seeds. Mix the packet of oriental flavoring in a seperate covered small bowl with the oil, vinegar and sugar. Shake well until the sugar is dissolved.  Pour over coleslaw mixture, mixing well.
Refrigerate one hour before serving.
beau's Pasta Con Broccoli
1 lb. medium shell pasta
1 stick butter or margarine
1 1/2 pints heavy whipping cream
1 pkg. frozen chopped broccoli
6 pcs bacon - fried crispy
1 clove garlic - crushed
1 sm onion - finely grated

Cook pasta and broccoli per pkg directions, drain well. Fry bacon and drain.
Saute onion and garlic in butter or margarine, until onion is translucent, watch closely.
Add whipping cream & parmesan cheese, cook until it comes to a full boil.
Add cooked pasta and broccoli.
Crumble bacon into mixture
Sauce will thicken as it sits
Great as leftovers
beau's Cream Puff Cake

1/2 cup (1 stick) butter
1 cup all-purpose flour
4 eggs
3 boxes (4 serving size) Instant vanilla pudding mix
1 (8 oz) pkg cream cheese - softened
4 cups milk
1 (8 oz) carton frozen whipped topping - thawed
Chocolate syrup

Pour 1 cup water in saucepan, add butter.  Bring to a boil.  Add flour, stir until well mixed.  Remove from heat and let cool 2 minutes.

Beat in eggs, one at a time, beating well after each addition. Spread mixture into greased 9 x 13 inch baking pan.

Bake in preheated 400 degree oven for 30 - 35 minutes (watch carefully and do not overbake). Let cool.

Combine pudding mix, cream cheese and milk.  Mix thoroughly. Pour mixture into cooled crust.  Cover with whipped topping and drizzle with chocolate syrup.

Keep refrigerated
Yield: 12 servings
beau's Peanut Brittle
2 cups sugar
1/2 cup water
1 cup light Karo syrup
2 cups raw peanuts
2 tsp baking soda
1 tbsp butter or margarine

Cook sugar, water and Karo syrup about 12-15 minutes.  Add butter and peanuts. Cook until it turns amber color. Watch closely. Remove from heat and add baking soda. Mixture will bubble up.  Pour into buttered 11x17 flat cookie sheet. Pound on table or counter to flatten. When cooled completely, break into pieces.
beau's Lasagna
1 pkg lasagna noodles
2 lbs lean ground beef (ground turkey works well too)
1 lg. jar Prego (or your favorite) spaghetti sauce
1 lg carton cottage cheese
1 pkg (3 cup) shredded mozzarella cheese
parmesan cheese
1/2 small onion, diced

Cook lasagna noodles per pkg directions and drain well
Fry gound beef & onion until browned & drain.
Add spaghetti sauce, cook until hot

spread small amt of sauce mixture on bottom of 9 x 13 baking dish

Layer lasagna this way:
lasagna (about 4 pcs per layer)
ground beef and sauce mixture
shredded mozarella cheese
cottage cheese
parmesan cheese

Continue layering until you reach top of baking dish. Top last layer with last bit of sauce mixture and cheeses. (This keeps the noodles from sticking to foil)

Bake covered at 350 degrees for 1 hour.
beau's Scalloped Corn Casserole
2 cans cream style corn
1 (8 1/2 oz) box corn muffin mix
4 eggs, beaten
1/2 cup oil
1 cup grated cheddar cheese

Mix all ingredients and bake in a 2 quart baking dish at 350 degrees until brown.  Approx. 1 hour.
