GloryBe's King Ranch Chicken Casserole

Bake or Stew a large hen, Cool and pull into bite size pieces

Chop/Mince:
large onion
green and red pepper
one or two cloves of garlic
(add minced stalk of celery also if you like it)
Saute above ingredients together in a bit of olive oil until translucent

In mixing bowl, combine
One Can of Chicken Broth if broth not saved when cooking chicken,
One Can of Ro-Tel
one Can cream of chicken soup
mix well and stir in cooked chicken
the mixture should be like a heavy soup or cream sauce, if not add more broth or chicken soup

Salt and pepper to taste

Grease large casserole and layer either torn bits of flour tortillas or cooked rice on bottom
top with chicken and soup mixture above
top with shredded cheddar or mexican type cheese
make another layer and proceed as above and top with cheese

Bake in 350 degree oven until bubbly

This recipe can be made without the flour tortillas and rice layers and just served over rice separately.  You have to experiment each time you make it b/c some chickens have higher level of moisture content than others.  You just don't want it to be dry
GloryBe's BLACK BEAN SOUP  (yummy)

2 Cans chicken broth
One finely chopped onion
1 bag small fresh baby carrots
1 bag frozen shoe peg corn or canned if can't find frozen
2 Cans black beans, drained and rinsed well
1 Large Can diced tomatoes
1 Can Ro-Tel

Cook onion, carrots and corn in small amt. of chicken broth until carrots are tender, add remainder of broth, add black beans, diced canned tomatoes and Ro-Tel.  Dump all the chicken broth in after the onions, corn, carrots are simmered done
Stir well and  simmer about 20 minutes. Add freshly grated Parmesan on top when served, canned parmesan if can't find fresh.
Makes a delicious meal :-)
GloryBe's Toffee - Brickle Cookies
2 sticks (1 cup)  softened butter, don't use margarine
1 cup well-packed brown sugar
1 cup granuated (white) sugar
2 teaspoona vanilla extract
3 eggs
1-3/4 cups plain flour - sifted
1/2 teaspoon salt - sift w/flour
1 teaspoon baking soda - sift w/flour
1 teaspoon of cinnamon or nutmeg (I use 1/2 teaspoon of each)
3 cups quick-cooking oats
1 8 oz. package HEATH Bits 'O Brickle Toffee Bits

add 1 Cup mixture of well-chopped nuts (walnuts or pecans),  raisins, flaked coconut -- or just 1 cup of either/or -- I use walnuts and raisins and have added a bit of flaked coconut at times.   It's your choice.

Heat oven to 350 degrees F.  Grease a cookie sheet or use parchment paper (I use parchment paper instead of greased cookie sheet).  Beat thebutter, sugar, vanilla until smooth, add eggs and mix well.  Add your flour, salt, soda, and cinnamon or nutmeg spice.  Stir in oats and other ingredients and blend well.  It will be stiffer than the first mixtures.  Drop by rounded spoonfuls about 2-inches apart.  Bake for 8-10 minutes until edges are slightly tan, Remove from oven, cool for about a minute and then remove to vented wire rack and let cool completely.  Makes about 4 dozen cookies.
